Lasagna dip is my favorite recipe to make during a busy week and it’s alwaysa big hit with everyone in my family.This recipe usually comes out right around back to school week, when we are all adjusting to our busy schedules. Sometimes I make the meat sauce the night before and just combine everything 15 minutes before dinnertime. I like that it works as an appetizer ora main meal, with some veggies on the side. My lasagna dip has a secret ingredient that makes the recipe that much more delicious – Shamrock Farms cottage cheese! INGREDIENTS

2 1/2 cups marinara sauce
1 large white onion (chopped)
1 garlic clove (chopped)
1 pound ground beef (cooked, drained)
2 tspitalian spices
1/2 cup Shamrock Farm’s cottage cheese
2 1/2 cups mozzarella cheese (shredded)
1 tbsp parsley (chopped)
1 sourdough loaf (sliced)

INSTRUCTIONS

Step 1:Preheat oven to 450 degrees. Cook the ground beef, chopped garlic and chopped onion all together. Add 1 tsp of italian spices to the meat, while cooking. Add in the marinara sauce and remaining 1 tsp of italian spices and allow to simmer for 10-15 minutes. Pour half of the meat sauce on the bottom of a large cast iron skillet.

Step 2: Layer 1/2 cup of Shamrock Farms cottage cheese on top of the meat sauce. Add 1 cup of mozzarella cheese on top of the cottage cheese, followed by the remaining meat sauce. Step 3: Top with the remaining mozzarella cheese.

Step 4: Bake at 450 degrees for 10-15 minutes, until cheese is melted and bubbling, broiling for the last 2 minutes. Top with 1 tbsp of freshly chopped parsley.

Step 6: Serve with a loaf of sliced sourdough bread for dipping.

  3. One of my favorite back to school easy recipes, is using Ritz crackers! I put them on a baking sheet…top with a tiny bit of pizza or spaghetti sauce…a pepperoni…and shredded cheese. I bake just until the cheese melts about 350! Does not take long! So easy for a quick and easy back to school snack! Our little one loves these!

  6. We love anything instant pot for back to school. Super easy favorite- chicken adobo– 4ish lbs boneless, skinless chicken thighs, 1/2 cup soy sauce, 1/2 cup white vinegar, 5 cloves of garlic– high pressure/manual for 15 min if fresh, 30-40min frozen. Shred, serve over rice or naan bread w/ steamed broccoli.

  8. Thinking about school starting has me looking go reward to fall crock pot meals. Taco chili is great for back to school! 1 lb of ground beef or chicken seasoned generously with garlic&onion powder), 2 cans of black beans & 2 cans of pinto beans (not drained), 28oz can of petite diced tomato (not drained), can tomato sauce, 2 packets taco season, chili powder and salt to taste, bag frozen corn optional
